Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream softened butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then blend in vanilla extract.
- Whisk together flour, baking powder, and salt in a separate bowl.
- Gradually add flour mixture to the butter mixture, stirring gently until just combined.
- Scoop dough onto baking sheets, flatten slightly, and make indentations for lemon curd.
- Fill each indentation with lemon curd.
- Bake for 10-12 minutes until edges are golden and cool on a wire rack.
- For the drizzle, melt white chocolate with heavy cream, then drizzle over cooled cookies.
