- Begin by preheating your oven to 325°F (160°C) and preparing an 8"x8" cake tin with butter. This step is vital to achieve the desired texture and ensures an even bake.
- Whisk the egg whites until stiff peaks form and then set them aside. This process introduces the air required for the fluffy top layer. Next, in a separate bowl, beat the egg yolks together with sugar until they turn a pale yellow hue. Add the vanilla extract and melted butter into the mix, ensuring a smooth blend.
- Incorporate the flour into the yolk mixture gently until just combined. Gradually add lukewarm milk while continuing to beat the mixture. The batter should be thin, similar to a crepe batter, to achieve the cake’s layered effect.
- Gently fold the beaten egg whites into the batter in three parts, preserving as much air as possible. Pour the batter into the prepared cake tin, smoothing the top for an even surface. Bake for 40–50 minutes until the cake has a golden brown crust and is firmly set. If it begins browning too quickly, cover it with foil mid-bake.
- Allow the cake to cool in the tin for about 10 minutes, then transfer it onto a cooling rack. Once completely cool, slice and dust with icing sugar. Serve with fresh strawberries and optional whipped cream for added elegance.
