- 4 medium sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup walnuts, chopped
- 8 ounces burrata cheese
- Fresh parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C). Peel and cut the sweet potatoes into cubes.
- In a bowl, combine sweet potatoes, olive oil, maple syrup, Dijon mustard, salt, and black pepper. Toss to coat.
- Spread sweet potatoes on a parchment-lined baking sheet and roast for 25-30 minutes.
- Toast walnuts in a dry skillet over medium heat for 5-7 minutes.
- Serve roasted sweet potatoes topped with burrata, walnuts, and parsley.
Notes
Make sure sweet potatoes are firm without blemishes for the best texture.
