Ingredients

  • 4 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup walnuts, chopped
  • 8 ounces burrata cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and cut the sweet potatoes into cubes.
  2. In a bowl, combine sweet potatoes, olive oil, maple syrup, Dijon mustard, salt, and black pepper. Toss to coat.
  3. Spread sweet potatoes on a parchment-lined baking sheet and roast for 25-30 minutes.
  4. Toast walnuts in a dry skillet over medium heat for 5-7 minutes.
  5. Serve roasted sweet potatoes topped with burrata, walnuts, and parsley.
