  • 2 teaspoons Cajun seasoning, divided
  • 8 oz fettuccine or linguine pasta
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley
  • Optional roasted Brussels sprouts for serving

Instructions

  1. Begin by prepping your chicken. Cut the boneless chicken breast or thighs into bite-sized cubes. Pat them dry with a paper towel, which will help them brown nicely. Season the cubed chicken with salt, black pepper, and half of your Cajun seasoning.
  2. In a large skillet, heat one tablespoon of olive oil or butter over medium-high heat. Once the oil is shimmering, add the chicken cubes in a single layer without overcrowding.
  3. Add minced garlic to the pan once the chicken is cooked through, stirring for about 30 seconds until fragrant. Pour in the pure maple syrup and let it simmer until it thickens.
  4. Meanwhile, bring a pot of salted water to boil. Add pasta and cook until al dente. Reserve about half a cup of pasta water, then drain the rest.
  5. Using the same skillet, melt the remaining butter. Pour in the heavy cream, remaining Cajun seasoning, and optionally, a pinch of red pepper flakes.
  6. Stir in the Parmesan cheese until smooth. Add reserved pasta water gradually to achieve desired sauce consistency. Toss the cooked pasta in this sauce.
  7. Serve the pasta topped with the maple garlic chicken and garnish with fresh parsley.
