- 2 balls burrata (250 g each, 500 g total)
- 1 zucchini, sliced (200 g)
- 1 small eggplant, sliced (250 g)
- 1 red bell pepper, sliced (150 g)
- 1 yellow bell pepper, sliced (150 g)
- ½ cup cherry tomatoes, halved (80 g)
- ¼ cup Kalamata olives (40 g)
- 2 tbsp olive oil (30 ml)
- Salt and black pepper, to taste
- 2 tbsp chopped fresh basil (6 g)
- 2 tbsp balsamic glaze (30 ml)
- Warm pita or crusty bread, for serving
Instructions
- Start by preheating your oven to 400°F (200°C). This temperature is key for ensuring your vegetables roast perfectly—achieving that golden, caramelized finish that enhances their flavors.
- In a large mixing bowl, toss the sliced zucchini, eggplant, red bell pepper, and yellow bell pepper. Drizzle the vegetables with olive oil and season generously with salt and freshly cracked black pepper. The olive oil not only helps in roasting but also adds a rich flavor. Mix everything well to ensure the vegetables are evenly coated.
- Spread the seasoned vegetables out on a parchment-lined baking sheet in a single layer. This arrangement allows for even roasting. Bake in the oven for 20 to 25 minutes, flipping them halfway through to ensure even cooking. You’re looking for a slight charring on the edges, which adds depth to the flavors.
- Once the vegetables are cooked, take them out of the oven and let them cool slightly. Place the burrata cheese in the center of a large serving board or platter. Around the burrata, artistically arrange the roasted veggies, halved cherry tomatoes, and Kalamata olives. The contrasting colors will make the dish visually stunning!
- Drizzle the burrata with balsamic glaze, which will not only add a hint of sweetness but will also elevate the entire dish. Finally, sprinkle chopped fresh basil over the board, infusing it with a herbal note that perfectly complements the other flavors.
