- Chicken:
- 1 tsp garlic powder
- 1 tsp lemon juice
- 2 boneless skinless chicken breasts
- ½ tsp dried oregano
- 1 tbsp olive oil
- Salt & pepper, to taste
- Potatoes:
- 1 tsp dried thyme
- 1 tbsp olive oil
- ½ tsp paprika
- 2 medium potatoes, cubed
- Salt & pepper, to taste
- Tzatziki:
- 1 tbsp lemon juice
- 1 garlic clove, minced
- ½ cup Greek yogurt
- 1 tbsp fresh dill, chopped
- ½ cucumber, grated & drained
- Salt & pepper, to taste
- Bowl:
- ½ cucumber, sliced
- ½ cup cherry tomatoes, roasted
Instructions
- Preheat your oven to 200°C (400°F). Toss cubed potatoes in a bowl with olive oil, thyme, paprika, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until crispy.
- Prepare the chicken by mixing olive oil, lemon juice, garlic powder, oregano, salt, and pepper. Grill the chicken for 6–7 minutes per side until fully cooked.
- For the tzatziki, combine Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper in a bowl. Refrigerate to meld flavors.
- Roast cherry tomatoes with olive oil, salt, and pepper during the last 10 minutes of potato roasting.
- Assemble the bowl with roasted potatoes, chicken, sliced cucumber, roasted tomatoes, and tzatziki on top.
Notes
