This vibrant, one-pan dish brings together tender chicken, fresh zucchini, and cherry tomatoes with bold flavors of feta, olives, and sun-dried tomatoes.


Ingredients

  • 4 boneless, skinless chicken breasts
  • ½ cup black olives, sliced
  • 2 large zucchinis, thinly sliced
  • ½ cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • 1 tsp dried oregano
  • ½ cup sun-dried tomatoes, chopped
  • 1 tsp dried basil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken with olive oil, garlic powder, oregano, basil, salt, and pepper.
  2. Place chicken in a greased baking dish. Arrange zucchini, cherry tomatoes, sun-dried tomatoes, and olives around the chicken.
  3. Bake for 30–35 minutes or until chicken is 165°F. Sprinkle feta on top before the last few minutes. Serve hot.

Notes

Ensure zucchini slices are even; adjust time for bone-in chicken.
