- 4 skinless, boneless chicken breasts
- 2 medium zucchini, sliced
- 1 pint cherry tomatoes, halved
- 1 red bell pepper, sliced
- ½ cup red onion, chopped
- 1 cup extra virgin olive oil
- 2 cloves garlic, minced
- ½ teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 1 cup fresh parsley, chopped
- ¼ cup fresh basil, chopped
- ½ cup feta cheese, crumbled
Instructions
- Preheat your oven to 400°F (200°C) and grease your baking dish.
- Season each chicken breast with salt, black pepper, oregano, and thyme.
- Add zucchini, cherry tomatoes, bell pepper, and red onion on top of the chicken.
- Whisk together olive oil, minced garlic, and herbs, and pour over the chicken and vegetables.
- Bake for 25–30 minutes until the chicken is cooked through and vegetables are tender.
- Garnish with parsley, basil, and feta cheese before serving.
