Ingredients

  • 4 skinless, boneless chicken breasts
  • 2 medium zucchini, sliced
  • 1 pint cherry tomatoes, halved
  • 1 red bell pepper, sliced
  • ½ cup red onion, chopped
  • 1 cup extra virgin olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 cup fresh parsley, chopped
  • ¼ cup fresh basil, chopped
  • ½ cup feta cheese, crumbled

Instructions

  1. Preheat your oven to 400°F (200°C) and grease your baking dish.
  2. Season each chicken breast with salt, black pepper, oregano, and thyme.
  3. Add zucchini, cherry tomatoes, bell pepper, and red onion on top of the chicken.
