  • 2 cups cubed crusty bread
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • Pinch of salt
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • ½ tsp dried oregano
  • Salt & black pepper, to taste

Instructions

  1. Begin by heating the olive oil in a skillet over medium heat. Once the oil is hot, add the minced garlic and bread cubes. Stir the mixture frequently for about 5 to 7 minutes, ensuring that the croutons are evenly toasted and golden brown. Sprinkle the croutons with a pinch of salt for flavor, then set them aside to cool while you prepare the rest of the salad.
  2. In a large mixing bowl, gently toss together the halved cherry tomatoes, crumbled feta cheese, halved Kalamata olives, thinly sliced red onion, and chopped parsley. If you’re opting for the greens, now is the time to add a handful of arugula or mixed greens to the mix.
  3. In a small bowl, whisk together the olive oil and red wine vinegar. Add the dried oregano, then season the dressing with a bit of salt and freshly cracked black pepper. Whisk it well to ensure all the flavors meld together seamlessly.
  4. Pour the refreshing dressing over your salad in the large bowl. Using salad tongs or clean hands, gently toss the mixture to coat the ingredients thoroughly. Be sure not to crush the tomatoes or feta as you combine everything together.
