Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup red onion, thinly sliced
  • 3.5 oz feta cheese, crumbled
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 garlic clove, minced
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large salad bowl, toss together the spring mix, cherry tomatoes, cucumber, Kalamata olives, and sliced red onion.
  2. In a separate bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, Dijon mustard, salt, and black pepper.
  3. Pour the freshly whisked dressing over the salad mixture just before serving and gently toss to coat.
