- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1 garlic clove, minced
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large salad bowl, toss together the spring mix, cherry tomatoes, cucumber, Kalamata olives, and sliced red onion.
- In a separate bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, Dijon mustard, salt, and black pepper.
- Pour the freshly whisked dressing over the salad mixture just before serving and gently toss to coat.
