Description

A colorful and hearty gratin that combines beet, sweet potato, and feta for a delightful dish.


Ingredients

  • 2 medium sweet potatoes, peeled and thinly sliced
  • 2 medium parsnips or golden beets, peeled and thinly sliced
  • 2 medium red beets, peeled and thinly sliced
  • 1½ cups heavy cream
  • ¾ cup grated Gruyère or Parmesan
  • ¾ cup crumbled feta cheese
  • 2 tbsp butter or olive oil
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme or dried herbs
  • ¾ tsp salt
  • ½ tsp black pepper
  • ½ cup chopped walnuts
  • Fresh parsley or chives, for garnish

Instructions

  1. Start by preheating your oven to 375°F (190°C). Lightly grease your baking dish with butter or olive oil.
  2. In a medium saucepan, warm the heavy cream with minced garlic, thyme, salt, and black pepper over low heat until fragrant.
  3. Layer sweet potato slices in the baking dish, pour cream over them, and sprinkle cheese. Repeat with parsnips (or golden beets) and red beets.
  4. Cover the dish with foil and bake for 35 minutes until tender.
  5. Remove the foil and top with feta and walnuts, then bake uncovered for another 15 minutes until golden.
  6. Let rest for 10 minutes before garnishing with parsley or chives.

Notes

Vegetables should be sliced evenly for uniform cooking.
