A colorful and hearty gratin that combines beet, sweet potato, and feta for a delightful dish.

- 2 medium sweet potatoes, peeled and thinly sliced
- 2 medium parsnips or golden beets, peeled and thinly sliced
- 2 medium red beets, peeled and thinly sliced
- 1½ cups heavy cream
- ¾ cup grated Gruyère or Parmesan
- ¾ cup crumbled feta cheese
- 2 tbsp butter or olive oil
- 2 garlic cloves, minced
- 1 tsp fresh thyme or dried herbs
- ¾ tsp salt
- ½ tsp black pepper
- ½ cup chopped walnuts
- Fresh parsley or chives, for garnish
Instructions
- Start by preheating your oven to 375°F (190°C). Lightly grease your baking dish with butter or olive oil.
- In a medium saucepan, warm the heavy cream with minced garlic, thyme, salt, and black pepper over low heat until fragrant.
- Layer sweet potato slices in the baking dish, pour cream over them, and sprinkle cheese. Repeat with parsnips (or golden beets) and red beets.
- Cover the dish with foil and bake for 35 minutes until tender.
- Remove the foil and top with feta and walnuts, then bake uncovered for another 15 minutes until golden.
- Let rest for 10 minutes before garnishing with parsley or chives.
Notes
Vegetables should be sliced evenly for uniform cooking.
