- 1 jar (8 oz) sun-dried tomatoes in oil
- 1 to 2 grated garlic cloves
- 1 small finely diced shallot
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp smoked or sweet paprika
- 1 to 2 tsp red chili flakes
- 1/2 cup grated parmesan cheese
- Fresh basil leaves, for garnish
Instructions
- Begin by draining the oil from the sun-dried tomatoes into a medium-sized pot. Take care to reserve about half a cup of this precious oil, as it will serve as the base for your dip. Now, chop about 1/3 cup of the sun-dried tomatoes and add these delicious morsels to the pot with the oil. Warm this mixture over low heat for approximately 5 minutes.
- Once the oil is warmed, start adding your aromatic ingredients to the pot. Grate the garlic cloves and finely dice the shallot. Place them both into the pot along with the warmed oil and the chopped sun-dried tomatoes. Sprinkle in the dried oregano, thyme, smoked or sweet paprika, and finish with red chili flakes to taste—this combination will add a spicy kick that balances the dip beautifully.
- Now that your aromatic oil is infused and fragrant, it’s time to bring the dip together. In a serving bowl, place the grated Parmesan cheese, which will melt slightly when the hot oil mixture is poured over it, creating a luscious dip. Carefully pour the infused oil and vegetable mixture over the Parmesan, ensuring that every morsel is coated with that delicious essence. Lastly, garnish with fresh basil leaves for a pop of color and herbal freshness.
