- 4 boneless skinless chicken breasts
- 1 cup fresh blackberries, lightly mashed
- 4 slices mozzarella or provolone cheese
- 4 jalapeños, thinly sliced, seeds mostly removed
- 2 teaspoons oregano or Italian seasoning
- 1 teaspoon garlic powder
- 2 tablespoons avocado oil or olive oil
- ½ cup dry white wine or chicken broth
- Sea salt and black pepper, to taste
- Handful of fresh parsley or basil, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and season the chicken breasts with oregano, garlic powder, sea salt, and black pepper.
- Slice a pocket into each chicken breast and stuff with cheese, jalapeños, and blackberries. Secure with toothpicks.
- Heat oil in a skillet and sear chicken for about 4 minutes per side until golden.
- Add wine or broth to deglaze, then bake in the oven for 12-15 minutes until the internal temperature reaches 165°F.
- Garnish with parsley or basil and serve hot.
