Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup fresh blackberries, lightly mashed
  • 4 slices mozzarella or provolone cheese
  • 4 jalapeños, thinly sliced, seeds mostly removed
  • 2 teaspoons oregano or Italian seasoning
  • 1 teaspoon garlic powder
  • 2 tablespoons avocado oil or olive oil
  • ½ cup dry white wine or chicken broth
  • Sea salt and black pepper, to taste
  • Handful of fresh parsley or basil, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and season the chicken breasts with oregano, garlic powder, sea salt, and black pepper.
  2. Slice a pocket into each chicken breast and stuff with cheese, jalapeños, and blackberries. Secure with toothpicks.
  3. Heat oil in a skillet and sear chicken for about 4 minutes per side until golden.
  4. Add wine or broth to deglaze, then bake in the oven for 12-15 minutes until the internal temperature reaches 165°F.
  5. Garnish with parsley or basil and serve hot.
