Description

A flavorful Mexican dish featuring tender pulled chicken seasoned to perfection.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can diced tomatoes with green chilies (14.5 oz)
  • 1/2 cup chicken broth
  • 1 packet taco seasoning
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic; sauté until fragrant.
  3. Season chicken breasts with salt and pepper and place in the pot.
  4. Pour in diced tomatoes and chicken broth.
  5. Add taco seasoning and stir well to combine.
  6. Cover and cook on low heat for 2 to 3 hours.
  7. Remove chicken, shred it, and return it to the pot with fresh lime juice.
  8. Serve with desired toppings.
