Mint Chocolate Chip Clusters

  • Author: Alioui
  • Total Time: 30 minutes
  • Yield: 12 servings 1x

Description

Mint Chocolate Chip Clusters are a delightful holiday treat combining chocolate and mint flavors in a crunchy, no-bake cluster.

Ingredients

Scale
  • 2 cups semi-sweet chocolate chips
  • 1 cup milk chocolate chips
  • 2 tablespoons butter
  • 1 ½ cups crispy rice cereal or cornflakes
  • 1 cup mini marshmallows
  • ¾ cup mint candy pieces or mint chocolate candies
  • ½ cup mini chocolate chips

Instructions

  1. Begin by combining the semi-sweet chocolate chips, milk chocolate chips, and butter in a heat-safe bowl. You can melt the mixture using a double boiler for even heat distribution—simply place the bowl over a pot of simmering water—or you can use a microwave, blasting the mixture in 30-second intervals. Stir frequently until everything is silky smooth and well mixed.
  2. Once the chocolate has melted perfectly, it’s time to fold in the rest of the ingredients. Gently add the crispy rice cereal, mini marshmallows, mint candy pieces, and mini chocolate chips into the bowl. Using a spatula, carefully combine everything until all the dry elements are evenly coated with the luscious chocolate mixture. This is essential for that perfect cluster texture!
  3. Now that your mixture is ready, take a tablespoon-sized scoop and drop mounds onto your prepared parchment-lined baking sheet. Make sure to leave some space between each mound as they will spread slightly as they set. Once you’ve completed this step, let the clusters sit at room temperature or place them in the refrigerator for about 20-30 minutes. This will ensure they firm up nicely for serving.
  4. After the clusters have hardened, gently peel them from the parchment paper. You can serve them immediately or store them in an airtight container. They can be enjoyed straight away, or you can let them sit out a bit to soften at room temperature before serving for an extra creamy treat!

Notes

Store leftovers in a sealed container to keep them fresh; they typically last up to two weeks in the fridge.
