  • 1 cup (240g) almond butter
  • 2 tbsp (42g) honey
  • 1/4 cup (30g) vanilla protein powder
  • 1/4 tsp peppermint extract
  • 1/4 cup (40g) mini dark chocolate chips
  • 12 tbsp (15-30ml) unsweetened almond milk (if needed)

Instructions

  1. Start by placing your rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract into a large mixing bowl. Use a spatula to mix these ingredients together until they are well combined. This mixture will form the base of your protein balls, so ensure that everything is evenly distributed.
  2. Once combined, check the texture of the mixture. It should be somewhat sticky but not overly wet. If it seems dry, add unsweetened almond milk one tablespoon at a time, mixing well after each addition, until you achieve a consistency that holds together but isn’t too gooey.
  3. Now, gently fold in the mini dark chocolate chips. This step is crucial as it adds that delicious chocolatey flavor that pairs so nicely with the mint. Make sure to mix them in evenly without breaking them too much, so each protein ball has a good amount of chocolate in every bite.
