- 1.5 pounds beef chuck roast, cubed
- 2 teaspoons adobo seasoning
- 1 packet sazón with annatto
- 4 cloves garlic, minced
- 1/3 cup sofrito
- 1/2 cup tomato sauce
- 2 bay leaves
- 2 large potatoes, peeled and cubed
- 2 carrots, sliced
- 2 tablespoons olive oil
- 3 cups beef broth or water
- Salt and pepper, to taste
Instructions
- Begin by seasoning the cubed beef chunks generously with adobo seasoning and a sprinkle of pepper.
- In a large pot, heat the olive oil over medium-high heat. Add the seasoned beef in batches, ensuring not to overcrowd the pot.
- Once all the beef is seared and removed from the pot, lower the heat slightly and add the sofrito and minced garlic to the pot. Sauté for about 2-3 minutes.
- Add the tomato sauce to the pot and stir well, cooking for about a minute.
- Return the seared beef to the pot. Sprinkle in the sazón and add the bay leaves. Pour in enough beef broth to cover the meat completely.
- Add the cubed potatoes and sliced carrots. Stir them into the stew and continue to cook uncovered for about 25-30 minutes.
- As the cooking time comes to an end, taste the stew and adjust the seasoning with salt and pepper as needed.
