- 1 cup buttermilk
- ½ cup sour cream
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup hot coffee
- 8 oz dark chocolate (70% or higher), chopped
- 1 cup heavy cream
- 4 tablespoons unsalted butter
Instructions
- Begin by preheating your oven to 350°F (175°C). Grease your cake pans with butter or oil and line the bottoms with parchment paper.
- In a large mixing bowl, sift together the all-purpose flour, Dutch-processed cocoa powder, baking soda, baking powder, salt, granulated sugar, and brown sugar.
- In another bowl, whisk together the eggs, buttermilk, sour cream, vegetable oil, and vanilla extract until smooth.
- Pour the wet mixture into the sifted dry ingredients and gently fold until just incorporated.
- Slowly stir in the hot coffee until fully mixed.
- Divide the batter evenly among the prepared cake pans and bake for 30–35 minutes, rotating halfway through.
- Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- To make the ganache, pour hot heavy cream over chopped dark chocolate, let sit, then stir until smooth.
- Place one layer on a serving plate, spread ganache on top, add the second layer, and repeat. Cover the entire cake with ganache.
- Chill the cake for 30 minutes before slicing and serving.
