  • 1 cup buttermilk
  • ½ cup sour cream
  • ½ cup vegetable oil

  • 1 cup hot coffee
  • 8 oz dark chocolate (70% or higher), chopped
  • 1 cup heavy cream
  • 4 tablespoons unsalted butter

Instructions

  1. Begin by preheating your oven to 350°F (175°C). Grease your cake pans with butter or oil and line the bottoms with parchment paper.
  2. In a large mixing bowl, sift together the all-purpose flour, Dutch-processed cocoa powder, baking soda, baking powder, salt, granulated sugar, and brown sugar.
  3. In another bowl, whisk together the eggs, buttermilk, sour cream, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet mixture into the sifted dry ingredients and gently fold until just incorporated.
  5. Slowly stir in the hot coffee until fully mixed.
  6. Divide the batter evenly among the prepared cake pans and bake for 30–35 minutes, rotating halfway through.
  7. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  8. To make the ganache, pour hot heavy cream over chopped dark chocolate, let sit, then stir until smooth.
  9. Place one layer on a serving plate, spread ganache on top, add the second layer, and repeat. Cover the entire cake with ganache.
  10. Chill the cake for 30 minutes before slicing and serving.
