  • 2 teaspoons vanilla extract

  • 1 to 2 cups fresh raspberries and blueberries (or mixed berries)
  • 2 tablespoons berry jam or fruit spread (optional)
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Start by mixing the graham cracker crumbs, melted butter, and granulated sugar in a medium bowl. Spoon the crust mixture into your serving cups, pressing it firmly to create an even layer. Place the cups in the refrigerator to chill.
  2. Next, pour your cold heavy whipping cream into a chilled mixing bowl and whip on medium-high speed until stiff peaks form. Set aside.
  3. In another mixing bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and salt together until smooth. Gently fold in the whipped cream.
  4. Spoon or pipe the cheesecake filling over the crust in each cup, smooth out the tops, and refrigerate to set for at least 4 hours.

Notes

Use room-temperature cream cheese for a smoother filling. Press the crust firmly into the cups for stability.
