Ingredients
Scale
- 1 1/2 cups graham cracker crumbs (or vanilla wafer crumbs)
- 5 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
- 16 oz cream cheese, softened
- 1 cup heavy whipping cream, cold
- 1/2 cup powdered sugar
- 2 teaspoons vanilla extract
- Pinch of salt
- 1 to 2 cups fresh raspberries and blueberries (or mixed berries)
- 2 tablespoons berry jam or fruit spread (optional)
- 1 teaspoon lemon juice (optional)
Instructions
- Start by mixing the graham cracker crumbs, melted butter, and granulated sugar in a medium bowl. Spoon the crust mixture into your serving cups, pressing it firmly to create an even layer. Place the cups in the refrigerator to chill.
- Next, pour your cold heavy whipping cream into a chilled mixing bowl and whip on medium-high speed until stiff peaks form. Set aside.
- In another mixing bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and salt together until smooth. Gently fold in the whipped cream.
- Spoon or pipe the cheesecake filling over the crust in each cup, smooth out the tops, and refrigerate to set for at least 4 hours.
Notes
Use room-temperature cream cheese for a smoother filling. Press the crust firmly into the cups for stability.
