Instructions
- Begin by combining the softened cream cheese, goat cheese, honey, vanilla extract, and salt in a medium-sized bowl. Using a spatula or a mixer, blend the ingredients thoroughly until the mixture achieves a smooth and creamy consistency.
- Next, add half of the finely chopped dried cranberries and pecans into your cheese mixture. Gently fold these ingredients in, ensuring that they are evenly distributed throughout the mixture.
- Once mixed, cover the bowl with plastic wrap or a lid and place it in the refrigerator. Let the mixture chill for about 1 to 2 hours.
- After chilling, take the cheese mixture out of the refrigerator. Using a small cookie scoop or your hands, take portions of the chilled mixture and roll them between your palms to form bite-sized balls.
- On a plate, combine the remaining chopped cranberries and pecans in a single layer. Roll each cheese ball gently in this mixture, making sure they are well-coated on all sides.
- Finally, arrange the coated cheese balls on a beautiful serving platter. You can serve them immediately, or refrigerate until you’re ready to present them.
