Instructions

  1. Begin by combining the softened cream cheese, goat cheese, honey, vanilla extract, and salt in a medium-sized bowl. Using a spatula or a mixer, blend the ingredients thoroughly until the mixture achieves a smooth and creamy consistency.
  2. Next, add half of the finely chopped dried cranberries and pecans into your cheese mixture. Gently fold these ingredients in, ensuring that they are evenly distributed throughout the mixture.
  3. Once mixed, cover the bowl with plastic wrap or a lid and place it in the refrigerator. Let the mixture chill for about 1 to 2 hours.
  4. After chilling, take the cheese mixture out of the refrigerator. Using a small cookie scoop or your hands, take portions of the chilled mixture and roll them between your palms to form bite-sized balls.
  5. On a plate, combine the remaining chopped cranberries and pecans in a single layer. Roll each cheese ball gently in this mixture, making sure they are well-coated on all sides.
