- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon instant espresso powder
- 1 cup finely crushed ladyfinger cookies
- 2 tablespoons brewed espresso, cooled
- 1/2 cup cocoa powder, for coating
- 1/4 cup mini chocolate chips (optional)
Instructions
- Start by placing the cold mascarpone cheese into a large mixing bowl. Using an electric mixer, beat the mascarpone until it turns smooth and creamy.
- Once your mascarpone is creamy, add the heavy cream, powdered sugar, vanilla extract, and instant espresso powder. Beat until thick and fluffy.
- Gently fold in the finely crushed ladyfinger cookies and the cooled brewed espresso.
- Cover the truffle mixture tightly with plastic wrap and refrigerate for about 30-40 minutes.
- Prepare a shallow dish with cocoa powder. Roll each truffle in the cocoa powder until fully coated and refrigerate for at least an hour.
