Description
Bright, zesty, and packed with energy perfect for on-the-go snacking!
Ingredients
-
1 cup rolled oats
-
⅓ cup almond butter (natural, unsweetened preferred)
-
¼ cup dried blueberries
-
½ tsp cinnamon (optional, but adds warmth)
-
1 tbsp chia seeds
-
1 tsp fresh lemon zest (organic lemon recommended)
-
½ cup vanilla protein powder (plant-based or whey)
-
1 tbsp shredded coconut (unsweetened)
-
2 tbsp honey (or pure maple syrup for a vegan option)
Instructions
In a large mixing bowl, add the rolled oats, vanilla protein powder, dried blueberries, lemon zest, cinnamon (if using), chia seeds, and shredded coconut. Mix well to distribute all the ingredients evenly. This ensures that every bite is filled with flavor and texture. The oats provide the base, while the chia seeds add a subtle crunch and nutrition boost. The dried blueberries bring natural sweetness, and the lemon zest adds a vibrant citrus kick.
Pour in the almond butter and honey (or maple syrup). These ingredients act as binders, holding everything together while also adding richness and sweetness. Using a spoon or silicone spatula, fold and press the mixture until everything is well combined. The texture should be thick and sticky but manageable. If it seems too dry, add a teaspoon of water or a bit more almond butter. If it’s too wet, mix in a little more oats or protein powder.
Continue mixing until the ingredients clump together. Use clean hands if needed—this helps bring everything together faster and gives you a feel for the texture. You’re looking for a dough that can easily be rolled into balls without crumbling. It should be slightly tacky but not overly sticky.
Scoop out about a tablespoon of the mixture and roll it between your palms to form a small ball. Repeat until all the mixture is used up. You should get about 15–18 bites, depending on the size. Place each ball onto a parchment-lined tray or plate as you go.
Place the tray in the refrigerator for at least 10–15 minutes. This helps the bites firm up and enhances the texture. Once chilled, transfer the bites to an airtight container. Store in the refrigerator for up to 7 days or freeze for up to 2 months for longer storage.
Notes
These No-Bake Lemon Blueberry Protein Bites are an excellent option for meal prepping. They’re portable, mess-free, and packed with whole-food ingredients. The balance of protein, fiber, and natural sugars provides sustainable energy without the crash.
Make sure to use fresh lemon zest for that bright citrus flavor. If using flavored protein powders, especially those with added sweeteners, adjust the honey or maple syrup to prevent them from being overly sweet.
For best results:
-
Use natural nut butter with no added oils or sugars.
-
Soften almond butter slightly if it’s too thick for easier mixing.
-
