Pistachio Date Energy Balls

  • Author: Alioui
  • Total Time: 40 minutes
  • Yield: Approximately 12 balls 1x

Description

A no-bake, easy-to-make treat combining the nutty richness of pistachios with the natural sweetness of dates, perfect for a quick energy boost.

Ingredients

Scale
  • 1 cup pitted dates
  • 1 cup raw pistachios
  • 1/2 cup rolled oats
  • 1/2 cup almond butter
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Start by ensuring all your ingredients are ready and at hand. Pit the dates if you haven’t already and confirm they’re soft. If necessary, soak them in warm water and then drain.
  2. Add your pitted dates, raw pistachios, rolled oats, almond butter, honey, vanilla extract, and sea salt into a food processor. Pulse until the mixture achieves a sticky, well-combined consistency. This ensures even distribution of flavors in every bite.
  3. Using your hands, form the mixture into small, evenly sized balls — about a tablespoonful each. If you find the mixture a bit sticky, slightly wet your hands with water for an easier rolling process.
  4. Place the rolled energy balls onto a plate and refrigerate them for at least 30 minutes to allow them to firm up. This chilling step is crucial for a firm yet chewy texture.

Notes

Ensure the dates are moist enough to help bind the mixture. If too dry, soaking is necessary. Keep the almond butter at room temperature to ease blending.
