  • 4 cups green cabbage, thinly sliced
  • 3 medium russet potatoes, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • 4 slices cooked bacon, chopped (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Start by washing and preparing all of the vegetables. Thinly slice the cabbage, dice the potatoes, chop the onion, and mince the garlic. This ensures that everything is ready to go once you start cooking, making the process smooth and efficient.
  2. If you’d like to improve the texture of your potatoes, parboiling is the way to go. Bring a pot of salted water to a boil, then add the diced potatoes. Allow them to cook for 5–7 minutes until they’re just fork-tender, taking care not to overcook. After the time is up, drain them and let them steam dry.
  3. Now it’s time to heat the olive oil or butter in a large skillet over medium heat. Once the oil is hot, add the parboiled potatoes (or raw if you skipped that step) in a single layer. Allow them to cook without stirring for several minutes until they develop a beautiful golden brown crust.
  4. In the same skillet, with the delicious residue from the potatoes still present, add the diced onions. Sauté them until soft and lightly golden.
  5. Next, introduce the minced garlic to the onions and sauté for about 30 seconds until fragrant. Then, add the thinly sliced cabbage to the mixture. Cook this combination for 10-15 minutes, stirring occasionally, until the cabbage becomes tender and slightly caramelized.
  6. Once the cabbage has reached the desired tenderness, it’s time to season. Add salt, black pepper, and smoked paprika, stirring well to incorporate the spices. Then, return the crispy potatoes to the skillet.
  7. Finally, remove the skillet from heat. Sprinkle generously with fresh parsley for a pop of color and freshness before serving it hot right from the skillet.
