Description

This One Pot Cheesy Sausage Pasta is a delightful and quick meal that combines savory sausage, creamy cheeses, and pasta all in one pot.

Ingredients

Scale
  • 1 lb (450g) Italian sausage – Mild or spicy, depending on your preference.
  • 1 medium onion, diced – Enhances flavor.
  • 3 cloves garlic, minced – A must-have for depth of taste.
  • 1 lb (450g) penne pasta – Or substitute with rigatoni, rotini, or fusilli.
  • 3 cups (710ml) chicken broth – Adds flavor while cooking the pasta.
  • 1 can (14.5 oz / 411g) diced tomatoes – Provides a rich, tangy base.
  • 1 tbsp tomato paste – Helps thicken the sauce.
  • 2 cups (200g) shredded mozzarella cheese – For ultimate gooeyness.
  • ½ cup (50g) grated Parmesan cheese – Adds depth and nuttiness.
  • 1 tsp dried Italian seasoning – A blend of basil, oregano, and thyme.
  • Salt and black pepper to taste – Essential seasonings.
  • Optional Add-Ins:
  • ½ tsp red pepper flakes – For a little heat.
  • 2 cups fresh spinach – Adds extra nutrients.
  • 1 cup cherry tomatoes – Enhances freshness.

Instructions

  1. Start by warming a large skillet or Dutch oven over medium heat. Add the Italian sausage to the pan, breaking it up with your spoon. Cook the sausage until it’s nicely browned, which should take about five minutes.
  2. Next, toss in the diced onion and minced garlic to the browned sausage. Cook them together until the onion becomes translucent—about 2 minutes.
  3. Pour in the chicken broth, diced tomatoes (with their juices), and the tomato paste. Stir everything together until well combined, then bring this mixture to a gentle boil.
  4. Once boiling, reduce the heat to low and let everything simmer uncovered for 12 to 15 minutes. Stir occasionally to prevent the pasta from sticking.
  5. Add in your shredded mozzarella and grated Parmesan cheese. Stir until the cheeses melt perfectly into the hot pasta.
  6. Adjust your dish by adding salt, black pepper, or red pepper flakes to taste. Serve hot and enjoy!

Notes

For a creamier sauce, consider adding a splash of heavy cream or cream cheese before serving. If the pasta absorbs too much liquid, add a little more chicken broth until the desired consistency is achieved.
