This One-Pot French Onion Pasta is a creamy and flavorful meal inspired by the classic French onion soup.

- 8 oz pasta (Orecchiette, shells, fusilli, or rotini)
- 2 large yellow onions, sliced
- 3 cloves garlic, minced
- 2 cups water + 1 tbsp beef bouillon (or use beef broth)
- 1 cup evaporated milk
- 1 tbsp Worcestershire sauce
- 1 tbsp soy sauce
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/4 tsp red pepper flakes (optional, for heat)
- 1 cup Gruyere cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 tbsp butter
- 2 tbsp olive oil
Instructions
- Start by heating the butter and olive oil in your Dutch oven over medium-low heat. Add the sliced onions along with a pinch of salt and pepper. Cook them for 30 to 35 minutes, stirring occasionally until they turn a deep golden brown.
- Once the onions are caramelized, stir in the minced garlic, red pepper flakes, Worcestershire sauce, and soy sauce. Allow this mixture to cook for about 30 seconds. Then, add the water, evaporated milk, and beef bouillon—stir to combine and bring to a boil.
- When your liquid is boiling, add your chosen pasta. Stir it in and reduce the heat to a gentle simmer. Cook uncovered for about 10-12 minutes until the pasta is al dente.
- Once the pasta is cooked, remove the pot from the heat. Gradually stir in the shredded Gruyere cheese and then the Parmesan cheese. Taste and adjust the seasoning if necessary.
Notes
For even richer flavor, you can caramelize the onions the day before.
