One-Pot Healthy Broccoli Mac and Cheese

Ingredients

  • 2 cups whole milk
  • 1 ½ cups water or vegetable broth (using broth adds an extra layer of flavor)
  • 8 oz pasta of your choice (regular, whole wheat, or gluten-free)
  • 810 oz broccoli, finely chopped
  • 2 cups shredded extra sharp cheddar cheese
  • ¼ cup plain Greek yogurt
  • 1 tbsp butter or ghee (optional)

Instructions

  1. Start by pouring the whole milk and water or vegetable broth into a large pot and bringing it to a boil over medium-high heat. Once you reach a rolling boil, add your choice of pasta. Reduce the heat to medium-low and allow it to simmer gently for about 10 minutes, or until the pasta is cooked al dente. Be sure to stir occasionally to prevent sticking!
  2. Once the pasta has been cooking for about 10 minutes, gently stir the finely chopped broccoli into the pot and let it cook for an additional 2–3 minutes, until both the pasta and broccoli are tender.
  3. Remove the pot from the heat and start stirring in the shredded cheddar cheese and Greek yogurt. Add butter or ghee if desired, and keep stirring until everything is melted and well-combined. Your mixture should come together as a perfectly creamy sauce that coats every piece of pasta and broccoli.

Notes

This dish is best enjoyed fresh; however, leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
