  • 1 teaspoon dried oregano

  • 1/4 teaspoon ground black pepper
  • Salt to taste
  • 2 tablespoons tomato paste
  • 1 can (14.5 oz) diced tomatoes
  • 2 cans (15 oz each) butter beans, drained and rinsed
  • 1/2 cup vegetable broth
  • 1/3 cup heavy cream or coconut cream
  • 1/2 cup shredded mozzarella or plant-based cheese (optional)
  • 2 cups baby spinach or chopped kale
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Begin by heating the olive oil in a Dutch oven or large pot over medium heat. Once hot, add the finely diced onion and cook for about 4–5 minutes until it becomes translucent and fragrant.
  2. Next, introduce the minced garlic into the pot and sauté for an additional 30 seconds.
  3. Now, it’s time to add the spices! Sprinkle in the red pepper flakes, smoked paprika, oregano, thyme, ground black pepper, and salt.
  4. Next, stir in the tomato paste and cook for 1-2 minutes. Then add the diced tomatoes along with their juices and bring the mixture to a gentle simmer.
  5. It’s time to introduce the butter beans. Add them along with the vegetable broth, stirring to combine everything.
  6. Reduce the heat and gently incorporate the heavy cream (or coconut cream) into the pot along with your choice of greens.
  7. If you’re opting for the cheese, sprinkle the shredded mozzarella on top, cover the pot, and let it melt for 2-3 minutes.
  8. Taste your masterpiece and adjust any seasonings as needed. Garnish with fresh herbs and serve hot.
