Ingredients

  • 2 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 cups broccoli florets
  • 8.8 ounces penne pasta
  • 2 1/2 cups chicken broth
  • 1/2 cup Thai peanut sauce

Instructions

  1. In your large pot, place the chicken cubes at the bottom, then add broccoli florets, penne pasta, and finally pour in the chicken broth.
  2. Turn the heat to medium-high and bring to a vigorous boil, then reduce to a simmer while leaving uncovered, stirring occasionally until the pasta is al dente.
  3. Remove from heat, stir in the Thai peanut sauce, and serve immediately.
