Instructions

  1. Start by preparing the crust which will hold this delectable cheesecake together. In a mixing bowl, combine the crushed graham crackers with the white sugar and melted butter. This mixture should be well-blended, resembling wet sand. Once combined, press the mixture firmly into the base of your springform pan, creating an even base. Chill this crust in the fridge for about 30 minutes to achieve a nice firmness.
  2. While your crust is chilling, prepare the delicious cream cheese filling. In a separate bowl, use an electric mixer to beat the softened cream cheese and remaining sugar together until it’s completely smooth without lumps. Add the eggs one at a time; make sure to mix well after each addition. Next, gently incorporate the vanilla extract and sour cream into the mixture until fully blended.
  3. The next essential step is adding the fruit to the filling. Carefully fold in the diced peaches and raspberries, ensuring they are evenly distributed throughout the mixture.
