- 2 ripe bananas, mashed
- 1/2 cup peanut butter
- 2 cups old-fashioned rolled oats
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/4 cups almond milk (or any milk of your choice)
- 2 tablespoons maple syrup (or honey)
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare your muffin tin.
- Mash the ripe bananas in a bowl until smooth.
- Stir in the peanut butter, vanilla extract, and maple syrup until combined.
- Mix in the rolled oats, cinnamon, baking powder, and salt.
- Add almond milk and stir until well mixed.
- If desired, fold in chocolate chips.
- Distribute the mixture into muffin cups.
- Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
- Cool slightly before removing from the tin.
