These Peanut Butter Guava Muffins perfectly blend the rich, nutty flavors of creamy peanut butter with the sweet, tangy notes of guava preserves.
Ingredients
Scale
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup creamy peanut butter
- 1/2 cup unsalted butter, melted and cooled
- 1 cup granulated sugar
- 2 large eggs
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 2/3 cup guava preserves
- 1/4 cup roasted peanuts, chopped
Instructions
- Start by preheating your oven to 350°F, a crucial step for proper baking. While waiting, line your muffin tin with paper liners, or lightly grease it with butter to ensure easy removal of the muffins later on.
- In a medium-sized mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- In a large mixing bowl, use a hand mixer to beat the creamy peanut butter, melted butter, and sugar together until smooth. Add the eggs one at a time, mixing well. Incorporate the whole milk and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
- Carefully fill each muffin cup halfway with the batter, place a teaspoon of guava preserves in the center, then cover with remaining batter.
- Bake for 20 to 22 minutes until a toothpick comes out clean.
- Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
