  • 2/3 cup guava preserves
  • 1/4 cup roasted peanuts, chopped

Instructions

  1. Start by preheating your oven to 350°F, a crucial step for proper baking. While waiting, line your muffin tin with paper liners, or lightly grease it with butter to ensure easy removal of the muffins later on.
  2. In a medium-sized mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, use a hand mixer to beat the creamy peanut butter, melted butter, and sugar together until smooth. Add the eggs one at a time, mixing well. Incorporate the whole milk and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  5. Carefully fill each muffin cup halfway with the batter, place a teaspoon of guava preserves in the center, then cover with remaining batter.
  6. Bake for 20 to 22 minutes until a toothpick comes out clean.
