Ingredients

  • 2 ripe pears, thinly sliced
  • 3 oz (85g) blue cheese, crumbled
  • ¼ cup toasted hazelnuts, crushed
  • 1 egg, beaten (for brushing)

For the Spiced Honey:

  • 2 tbsp honey
  • ¼ tsp ground cinnamon
  • ¼ tsp ground nutmeg

Optional Garnish:

  • Fresh rosemary sprigs
  • Flaky sea salt

Instructions

  1. Begin by preheating your oven to 375°F (190°C) and lining a baking sheet with parchment paper. Roll out the puff pastry to a large circle, approximately 12 inches in diameter, and cut out a small circle from the center.
  2. Make shallow cuts around the outer edge of the pastry to create decorative flair. Gently twist each section to enhance the presentation.
  3. In a sauté pan, heat a teaspoon of butter and sauté the thinly sliced pears until golden.
  4. Arrange sautéed pears over the pastry ring, crumble blue cheese on top, and sprinkle with crushed hazelnuts.
  5. Brush the pastry edges with beaten egg and bake for 12–15 minutes until golden brown.
  6. Prepare the spiced honey by warming honey with cinnamon and nutmeg until smooth.
  7. Drizzle the spiced honey over the baked wreath and garnish with rosemary and flaky sea salt before serving.

Notes

Ensure puff pastry is fully thawed for best results, and use various types of pears based on availability. Store leftovers in an airtight container.
