- Using a coring tool or paring knife, carefully remove the top inch of the apples and the core, making sure to leave about a quarter-inch of the apple’s flesh all around. This hollow space is essential for holding the delicious pumpkin pie filling without the apple collapsing.
- In a mixing bowl, whisk together the canned pumpkin purée, egg (or flaxseed mixture for the vegan version), brown sugar, cinnamon, pumpkin pie spice, vanilla, and a pinch of salt. Mix until the filling is smooth and well combined, infusing the flavors evenly across the mixture.
- Spoon the pumpkin mixture into the prepared apple cavities, filling them just to the top. This careful filling ensures the filling sets correctly without overflowing during the baking process.
- Place the filled apples onto the prepared baking dish and transfer them to the preheated oven. Bake for 35 to 40 minutes. You’ll know they’re done when the apples are tender to the touch and the filling is set. However, be wary not to overcook the apples, as this could cause them to break down too much.
