- 2 boneless skinless chicken breasts
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 0.5 cup chicken broth
- 5.2 ounces Boursin garlic & fine herbs cheese
- 0.5 cup heavy cream
- 1 tablespoon fresh parsley, chopped
Instructions
- First, pat the chicken breasts dry with paper towels and season them generously with salt and black pepper.
- Next, heat the olive oil in your skillet over medium-high heat and sear the chicken for about 4-5 minutes on each side.
- In the same skillet, reduce the heat and add the unsalted butter then the sliced mushrooms, sauté for about 6-7 minutes.
- Add minced garlic to the mushrooms and sauté for about a minute, then deglaze the pan with chicken broth and simmer for 2-3 minutes.
- Stir in the Boursin cheese and heavy cream to make a cream sauce.
- Return the chicken breasts to the skillet and cover, allowing it to simmer for another 8-10 minutes.
