  • 2 boneless skinless chicken breasts
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 0.5 cup chicken broth
  • 5.2 ounces Boursin garlic & fine herbs cheese
  • 0.5 cup heavy cream
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. First, pat the chicken breasts dry with paper towels and season them generously with salt and black pepper.
  2. Next, heat the olive oil in your skillet over medium-high heat and sear the chicken for about 4-5 minutes on each side.
  3. In the same skillet, reduce the heat and add the unsalted butter then the sliced mushrooms, sauté for about 6-7 minutes.
  4. Add minced garlic to the mushrooms and sauté for about a minute, then deglaze the pan with chicken broth and simmer for 2-3 minutes.
  5. Stir in the Boursin cheese and heavy cream to make a cream sauce.
  6. Return the chicken breasts to the skillet and cover, allowing it to simmer for another 8-10 minutes.
  7. Serve your Easy Boursin Chicken hot, garnished with freshly chopped parsley.
