- To begin, add the 2 eggs, 1 2/3 cups of all-purpose flour, 1 cup of milk, 1 cup of mineral water, 2 tablespoons of vegetable oil, and 1 teaspoon of salt to your blender. Blend these ingredients together until you achieve a smooth and silky batter. Once blended, let the batter rest for about 5 minutes; this resting period is crucial as it allows the flour to absorb the liquid fully, resulting in a tender texture when cooked.
- Next, take your non-stick skillet or crepe pan and place it on the stove over medium-high heat. It's important to ensure the pan is adequately hot before pouring in your batter. Lightly coat the surface with vegetable oil using a paper towel, which helps prevent the crepes from sticking. Remember to reapply oil with the paper towel before cooking each crepe for optimal results!
- Once your pan is ready, pour about ¼ cup of the batter into the center of the hot pan. Immediately swirl the pan gently to spread the batter evenly across the surface, creating a thin layer. Cook the crepe for about 1–2 minutes, or until the surface appears set and no longer wet, while the bottom should take on a lovely light brown hue.
- After cooking the first side, use a spatula to gently loosen the edges of the crepe from the pan. With a quick but careful motion, flip the crepe over and allow it to cook for another minute until the other side is golden brown. This flipping process can take a bit of practice, but once you get it down, it becomes quite easy!
- After your crepe is cooked, transfer it to a plate and keep it warm while you continue cooking the remaining batter. Once all crepes are done, it’s time to add toppings!
