  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 8 oz wide egg noodles
  • 3/4 cup sour cream
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Start by heating your large skillet over medium-high heat. Add the olive oil and let it warm for a few seconds before adding the ground beef. Cook the beef until it is well browned, which typically takes about 5-7 minutes. It’s crucial to break the meat apart as it cooks to ensure even browning.
  2. Once your beef is browned, it’s time to add the chopped onion and garlic. Stir and cook for about 3-4 minutes, or until the onion becomes translucent and fragrant. Next, add the sliced mushrooms to the skillet and sauté everything together until the mushrooms release their moisture and soften, approximately another 4-5 minutes.
  3. Sprinkle the all-purpose flour over your beef and vegetable mixture, stirring it in carefully while cooking for an additional minute. Gradually pour in the beef broth, continuously stirring to avoid lumps. Mix in Worcestershire sauce, Dijon mustard, smoked paprika, and season with salt and black pepper. Stir well to combine all the ingredients.
  4. Bring the mixture to a gentle boil and add in the uncooked wide egg noodles. Reduce the heat, cover the pot, and allow it to simmer. Cook for 8-10 minutes, stirring occasionally.
  5. Finally, once the noodles are cooked al dente, remove the pot from heat and stir in the sour cream, allowing it to blend into the sauce for a rich and creamy texture.

Notes

To prevent your leftover Stroganoff from drying out, add a splash of beef broth when reheating.
