- 1 tbsp olive oil
- 12 oz smoked sausage, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 (15 oz) cans white beans, drained and rinsed
- 1 cup chicken broth
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- Salt and pepper, to taste
- 2 cups fresh spinach
- Grated Parmesan cheese, for serving (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage to the skillet, stirring occasionally until the sausage gets a nice brown color, which will take about 4–5 minutes.
- Introduce the diced onion, chopped red bell pepper, and minced garlic into the skillet with the sausage and let them cook for about 3–4 minutes.
- Now, add the drained and rinsed white beans to the skillet, followed by the chicken broth, smoked paprika, thyme, salt, and pepper.
- Finally, toss in the fresh spinach, stirring it into the mix and continuing to cook for another 1–2 minutes until the spinach is wilted.
