- 1 pound ground beef
- 2 cups cooked white rice
- 1 small green bell pepper, diced
- 1 small red bell pepper, diced
- 1 stalk celery, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 0.5 teaspoon smoked paprika
- Salt and black pepper, to taste
- 0.25 cup chicken broth or water
- 2 tablespoons chopped fresh parsley
- 2 green onions, sliced (for garnish)
- Optional: a pinch of cayenne pepper or hot sauce
Instructions
- Start by dicing your vegetables—this includes the bell peppers, celery, onion, and garlic. If you don’t already have rice cooked, now’s a good time to prepare it and let it cool.
- Place your large skillet over medium-high heat and add the ground beef. Let it brown undisturbed for about 2–3 minutes, then break it up and cook until fully browned. Drain excess fat.
- Introduce the diced onion, celery, and bell peppers to the skillet. Stir and sauté for around 5–6 minutes, until softened.
- Add the minced garlic and cook for an additional 30 seconds. Stir in Cajun seasoning, smoked paprika, salt, and cayenne if desired.
- Add the cooked rice and chicken broth. Stir everything together and heat for about 3-5 minutes.
- Remove from heat. Add chopped fresh parsley and adjust seasoning as needed.
- Garnish with sliced green onions before serving.
Notes
This dish is best served fresh, but leftovers can be stored in the fridge for up to 3 days.
