Ingredients

  • 1 pound ground beef
  • 2 cups cooked white rice
  • 1 small green bell pepper, diced
  • 1 small red bell pepper, diced
  • 1 stalk celery, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • 0.5 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 0.25 cup chicken broth or water
  • 2 tablespoons chopped fresh parsley
  • 2 green onions, sliced (for garnish)
  • Optional: a pinch of cayenne pepper or hot sauce

Instructions

  1. Start by dicing your vegetables—this includes the bell peppers, celery, onion, and garlic. If you don’t already have rice cooked, now’s a good time to prepare it and let it cool.
  2. Place your large skillet over medium-high heat and add the ground beef. Let it brown undisturbed for about 2–3 minutes, then break it up and cook until fully browned. Drain excess fat.
  3. Introduce the diced onion, celery, and bell peppers to the skillet. Stir and sauté for around 5–6 minutes, until softened.
  4. Add the minced garlic and cook for an additional 30 seconds. Stir in Cajun seasoning, smoked paprika, salt, and cayenne if desired.
  5. Add the cooked rice and chicken broth. Stir everything together and heat for about 3-5 minutes.
  6. Remove from heat. Add chopped fresh parsley and adjust seasoning as needed.
  7. Garnish with sliced green onions before serving.

Notes

This dish is best served fresh, but leftovers can be stored in the fridge for up to 3 days.
