- 2 cups bread cubes
- 1/3 cup grated Parmesan cheese

- 1/3 cup mayonnaise
- 3 tablespoons olive oil

Instructions
- Start by removing the tough stems from the kale. Discard the stems and chop the leaves into bite-sized pieces. This is an essential step because it helps the dressing adhere better to the leaves. Afterward, massage the chopped kale with 2 tablespoons of lemon juice for 1-2 minutes.
- In a medium bowl, combine the mayonnaise, minced garlic, lemon juice, Dijon mustard, anchovy paste (if using), salt, and pepper. Whisk these ingredients together until they are well blended.
- In a frying pan, heat a bit of olive oil over medium heat. Add the bread cubes and toast them until they’re golden brown and crispy, which usually takes around 5-7 minutes.
- Once the kale is properly massaged and the dressing is made, it’s time to combine! Place the massaged kale in a large salad bowl and pour the freshly made Caesar dressing over the top.
- Add the crispy croutons and grated Parmesan cheese to the dressed kale and give everything another gentle toss. This ensures the salad is well mixed, and you can add more Parmesan on top for that gourmet touch.
