- 1 baguette, sliced ½ inch thick
- ¼ cup unsalted butter
- 4 garlic cloves, minced
- Salt and pepper, to taste
- 3 medium peaches, diced
- 1 pint cherry or grape tomatoes, chopped
- 2 tbsp extra virgin olive oil
- Juice of ½ lemon
- 1 cup ricotta cheese
- Handful of fresh basil, chopped
- Balsamic glaze, for drizzling
Instructions
- Prepare the garlic butter by combining butter, garlic, and salt; spread on baguette slices.
- Toast the bread at 400°F (200°C) for 10-12 mins or grill for 1-2 mins.
- Make peach-tomato topping with peaches, tomatoes, garlic, olive oil, lemon juice, salt, and pepper; let sit.
- Whip ricotta in a food processor until creamy.
- Assemble: spread ricotta on baguette, top with peach-tomato mixture, drizzle with balsamic glaze.
Notes
For best results, serve immediately after assembly for the freshest taste.
