Ingredients

  • 1 baguette, sliced ½ inch thick
  • ¼ cup unsalted butter
  • 4 garlic cloves, minced
  • Salt and pepper, to taste
  • 3 medium peaches, diced
  • 1 pint cherry or grape tomatoes, chopped
  • 2 tbsp extra virgin olive oil
  • Juice of ½ lemon
  • 1 cup ricotta cheese
  • Handful of fresh basil, chopped
  • Balsamic glaze, for drizzling

Instructions

  1. Prepare the garlic butter by combining butter, garlic, and salt; spread on baguette slices.
  2. Toast the bread at 400°F (200°C) for 10-12 mins or grill for 1-2 mins.
  3. Make peach-tomato topping with peaches, tomatoes, garlic, olive oil, lemon juice, salt, and pepper; let sit.
  4. Whip ricotta in a food processor until creamy.
  5. Assemble: spread ricotta on baguette, top with peach-tomato mixture, drizzle with balsamic glaze.

Notes

For best results, serve immediately after assembly for the freshest taste.
