Ingredients

  • 2 large flatbreads
  • 1 1/2 cups cooked chicken, sliced or shredded
  • 1/2 cup basil pesto
  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Season the cooked chicken with salt and black pepper.
  3. Place flatbreads on the prepared baking sheet and lightly brush edges with olive oil. Spread pesto over each flatbread.
  4. Sprinkle mozzarella cheese over the top, then distribute seasoned chicken and cherry tomatoes.
  5. Bake for approximately 12 to 15 minutes, until cheese is melted and bubbly.
  6. Let the flatbreads rest for 2 minutes before slicing and serving warm.

Notes

For best results, use freshly shredded mozzarella cheese and let the pizza rest after baking.
