This plant-based Cacciatore is a quick and delicious comfort food perfect for busy weeknights.

- 1 tbsp Italian herbs
- ½ cup chopped carrots
- 2 x 15 oz cans cooked lentils, drained
- 5 oz tomato paste
- ½ cup chopped bell pepper
- 7 oz pitted olives, drained
- 2 tsp smoked paprika
- ½ cup chopped onion
- 3 oz capers, drained
- 2 tbsp olive oil
- 5 cloves garlic, chopped
- 1 tsp thyme
- 8 oz mushrooms, chopped
- 2 x 15 oz cans chopped tomatoes
- Salt and pepper, to taste
Instructions
- Begin by heating two tablespoons of olive oil in a large pot over medium heat. Once the oil glistens, add your chopped onion and minced garlic into the pot. Stir them together, allowing them to sauté for about 2–3 minutes, or until the mix softens and becomes aromatic.
- Next, toss in your chopped mushrooms, bell pepper, and carrots. Stir everything together and cook on medium heat for about 5 minutes.
- Add the drained lentils, chopped tomatoes, and tomato paste, followed by the olives and capers. Sprinkle in your Italian herbs, smoked paprika, thyme, salt, and pepper. Give everything a good stir.
- Bring the pot to a light simmer and let it cook gently for about 5 more minutes.
- Once your Cacciatore is finished simmering, serve it on top of rice, polenta, or your favorite pasta.
