Description

This Reese’s Peanut Butter Cup Roll Cake is a decadent dessert that combines the beloved flavors of chocolate and peanut butter with layers of creamy filling and crunchy mini Reese’s Cups.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream
  • 1/2 cup mini Reese’s Peanut Butter Cups, chopped
  • 1 cup chocolate ganache or chocolate frosting
  • Reese’s Pieces or additional mini peanut butter cups for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
  2. Sift together the flour, cocoa powder, baking powder, and salt.
  3. Beat eggs and sugar on high speed until thick, pale, and frothy. Fold in milk and vanilla extract.
  4. Gently fold the dry ingredients into the egg mixture.
  5. Spread batter evenly in prepared pan and bake for 10-12 minutes.
  6. Roll the warm cake in a towel dusted with powdered sugar and let cool completely.
  7. Beat peanut butter, powdered sugar, and heavy cream to make filling.
  8. Unroll cake, spread with filling and chopped Reese’s, then re-roll.
  9. Top with ganache or frosting and garnish as desired.

Notes

For nut allergies, replace peanut butter with sunflower seed butter. For gluten-free, use a gluten-free flour blend.
