- 6 cups baby spinach
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- ½ cup pecans, chopped
- ¼ cup feta cheese, crumbled
- 2 tablespoons balsamic glaze
- 1 tablespoon honey
- 2 tablespoons olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Begin by taking a large mixing bowl and adding the fresh baby spinach to it.
- If you’re using strawberries, slice them into bite-sized pieces.
- Add in the mixed berries, which can include blueberries and raspberries.
- In a medium skillet, toast the chopped pecans over medium heat for 2 to 3 minutes, stirring frequently.
- Sprinkle the toasted pecans on top of the spinach and berries.
- Crumble the feta cheese over the mixture.
- For the dressing, combine the balsamic glaze, honey, olive oil, salt, and black pepper in a small bowl.
- Drizzle the dressing over the salad and toss gently to coat evenly.
- Serve immediately and enjoy!
