Ingredients

  • 6 cups baby spinach
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • ½ cup pecans, chopped
  • ¼ cup feta cheese, crumbled
  • 2 tablespoons balsamic glaze
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Begin by taking a large mixing bowl and adding the fresh baby spinach to it.
  2. If you’re using strawberries, slice them into bite-sized pieces.
  3. Add in the mixed berries, which can include blueberries and raspberries.
  4. In a medium skillet, toast the chopped pecans over medium heat for 2 to 3 minutes, stirring frequently.
  5. Sprinkle the toasted pecans on top of the spinach and berries.
  6. Crumble the feta cheese over the mixture.
  7. For the dressing, combine the balsamic glaze, honey, olive oil, salt, and black pepper in a small bowl.
  8. Drizzle the dressing over the salad and toss gently to coat evenly.
  9. Serve immediately and enjoy!
