  • 1 cup baby spinach or bok choy

For the Noodles & Garnishes:

  • 8 oz rice noodles
  • Additional green onions for garnish
  • Lime wedges (optional)
  • Red pepper flakes for spice (optional)

Instructions

Step 1: Prepare the Rice Noodles

  1. Cook the rice noodles according to the package instructions.
  2. Once cooked, drain them in a colander and rinse with cold water to prevent sticking.
  3. Set the noodles aside while preparing the broth and shrimp.

Step 2: Sauté the Aromatics

  1. In a large pot, heat sesame oil over medium heat.
  2. Add the julienned carrot and cook for 2–3 minutes until slightly softened.
  3. Stir in the sliced ginger and minced garlic.
  4. Cook for about 1 minute until fragrant, making sure not to burn the garlic.

Step 3: Cook the Shrimp

  1. Add the shrimp to the pot.
  2. Cook for 2–3 minutes, stirring occasionally, until the shrimp turn pink and opaque.
  3. Remove the shrimp from the pot and set them aside to prevent overcooking.

Step 4: Build the Broth

  1. Pour in the chicken or vegetable broth and bring it to a gentle boil.
  2. Reduce the heat and let the soup simmer for 5–7 minutes, allowing the flavors to blend.

Step 5: Combine Everything

  1. Stir in the cooked rice noodles and soy sauce.
  2. Add the green onions and let them cook for about 1 minute.
  3. Toss in the baby spinach or bok choy, stirring until the greens are just wilted.
  4. Return the cooked shrimp to the pot and let them warm up for another minute.

Step 6: Serve and Enjoy

  1. Ladle the soup into serving bowls while hot.
  2. Garnish with extra green onions and a squeeze of lime for added freshness.
  3. If you like spice, sprinkle a little red pepper flakes on top.
  4. Serve immediately and enjoy your comforting bowl of Rice Noodle Soup with Shrimp! 🍜

Notes

  • Choosing Shrimp: Use medium or large shrimp, either fresh or frozen. If using frozen, thaw them before cooking.
  • Noodle Tip: Rinse the rice noodles with cold water after cooking to prevent them from becoming mushy.
  • Vegetable Swaps: Try adding mushrooms, bell peppers, bean sprouts, or baby corn for extra texture.
  • Spice Level: Adjust heat by adding chili oil, fresh chilies, or Sriracha.
  • Broth Depth: Enhance the broth by adding a dash of fish sauce or a spoonful of miso paste for umami flavor.
