- Begin by seasoning your chicken chunks generously with salt and pepper to enhance their flavor. Next, dredge the seasoned chicken in all-purpose flour, ensuring each piece is coated evenly. This flour will help create a lovely, golden crust when you sear the chicken.
- In a large skillet, heat a combination of olive oil and one tablespoon of butter over medium-high heat. Once the skillet is hot, carefully add the dredged chicken pieces in a single layer. Allow them to cook undisturbed for about 3-4 minutes on each side or until they achieve a golden-brown color. Once seared, remove the chicken from the skillet and set it aside.
- Using the same skillet, add the remaining two tablespoons of butter and let them melt. Add the finely chopped onions to the skillet, stirring occasionally until they turn translucent and aromatic. Follow this up with the minced garlic, ensuring not to let it burn, as it can become bitter. Cook for about 30 seconds before moving on to the next step.
- Next, add the sliced mushrooms to the skillet. Sauté them for approximately 6-8 minutes, allowing them to brown and releasing their moisture.
- After the mushrooms are nicely browned, sprinkle another tablespoon of flour over them and stir well. Cook this mixture for about a minute, allowing the flour to absorb the moisture. Slowly whisk in the chicken broth, making sure there are no lumps. Subsequently, add the Dijon mustard, stirring to incorporate. Bring the mixture to a gentle simmer to meld all the flavors together.
- Reduce the heat to low and stir in the sour cream until fully combined and smooth. Then, return the seared chicken pieces back to the skillet, allowing them to simmer for an additional 5 minutes.
- Finally, taste your stroganoff and adjust the seasoning with more salt and pepper as needed. Remember to garnish the dish with fresh chopped parsley for a lovely pop of freshness before serving.
