Instructions

  1. Start by preheating your oven to 350°F (175°C). Clean your beets thoroughly to remove any dirt. Pat them dry, then drizzle with olive oil, ensuring they are lightly coated. Wrap the beets in aluminum foil to trap steam and flavor during roasting. Place them on a baking sheet and roast in your preheated oven for 60-90 minutes; the time will vary depending on their size, so check for tenderness with a fork. Once roasted, allow them to cool before peeling away the skin.
  2. When the beets are cool enough to handle, slice them into rounds about ¼ to ½ inch thick. This thickness will allow for a nice layering effect in your stacks. While you prepare the beets, heat a dry skillet over medium heat and add your chopped walnuts. Toss them lightly until they become fragrant and golden, making sure they don’t burn. This toasting process enhances the flavor and adds a nice crunch to your stacks.
  3. In a small bowl, combine the balsamic vinegar and walnut oil. Whisk the ingredients together until they are thoroughly mixed and start to emulsify.
