- 1 tbsp olive oil
- 3 tbsp butter, divided
- 2 small zucchinis, sliced
- Salt & pepper, to taste
- 1 small yellow onion, diced
- 1 lb button mushrooms, cleaned & dried
- 3–4 garlic cloves, minced
- 2 tsp fresh chopped herbs (or 1 tsp dried thyme/oregano)
- ¼ cup vegetable broth
- Chopped parsley, for garnish
- Grated Parmesan, for garnish
Instructions
- Begin by heating olive oil along with half a tablespoon of butter in a large skillet over medium-high heat. Add the sliced zucchinis, season them lightly with salt and pepper, and sauté for about 3 to 4 minutes. The zucchinis should become tender with a slight golden-brown color. Remove them from the skillet and set aside for later use.
- In the same skillet, melt the remaining butter. Add the diced onions, stirring them for around 2 minutes until they start to become transparent. Then, add the button mushrooms. Cook for approximately 5 to 7 minutes or until the mushrooms are nicely browned and slightly crispy on the edges.
- Into the skillet, stir in the minced garlic and your choice of fresh herbs or dried spices like thyme or oregano. Continue cooking for an additional 20 seconds, or until the garlic releases a rich and fragrant aroma, ensuring you don't let the garlic overcook.
- Return the sautéed zucchini back into the skillet, stirring to combine all the ingredients. Then pour in the vegetable broth. Allow everything to simmer together for about 2 minutes. This step ensures that the flavors meld together beautifully and the vegetables are all evenly heated.
- Once the vegetables have simmered, taste and adjust the seasoning as necessary. Move the dish to a serving plate, garnishing it generously with chopped parsley and a sprinkle of grated Parmesan. Serve the dish warm to your delighted guests or family members.
Notes
Moisture can prevent mushrooms from browning properly; dry them well before cooking.
