  • 1 avocado, sliced
  • 2 tbsp olive oil
  • 1 yellow onion, diced
  • 2 tbsp hot honey
  • 2 tbsp taco seasoning (or 1 packet)
  • 1 lb lean ground beef (93%)
  • 2 medium sweet potatoes, peeled and diced
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp cinnamon
  • Salt and pepper, to taste

Instructions

  1. Begin by preheating your oven to 400°F (200°C), ensuring it is ready for the sweet potatoes. While the oven warms up, wash and peel the sweet potatoes, then dice them into uniform cubes to promote even cooking. This step is key for achieving that delicious caramelization on the edges.
  2. In a large mixing bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, garlic powder, paprika, a pinch of cinnamon, salt, and pepper. Once well coated, spread the sweet potatoes evenly on a lined baking sheet.
  3. Place the baking sheet in the oven and roast for about 40-45 minutes. Halfway through the cooking time, be sure to flip the sweet potatoes to ensure they cook evenly.
  4. While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the diced yellow onion and cook until translucent, about 5 minutes.
  5. Add the lean ground beef to the skillet, sprinkle in the taco seasoning, and cook until browned, about 8-10 minutes.
  6. Assemble your bowl starting with a base of roasted sweet potatoes, then layer the ground beef mixture, sliced avocado, and a scoop of cottage cheese. Drizzle hot honey over each bowl.
